Double Layer Pumpkin Cheesecake

With posting this I may very well lose some of you readers! :) I know not everyone is a huge fan of cheesecake, but this recipe sounds so delicious!

Because its the Holiday season and everyone should indulge in desserts this recipe should be one to try.

Double Layer Pumpkin Cheesecake

Serves 8, Prep time 30 min, Cook time 40 min, Total time 4 hours 10 min

Ingredients

  • 2 (8 ounce) packages cream cheese, softened
  • 1/2 cup white sugar
  • 1/2 teaspoon vanilla extract
  • 2 eggs
  • 1 (9 inch) prepared graham cracker crust
  • 1/2 cup pumpkin puree
  • 1/2 teaspoon ground cinnamon
  • 1 pinch ground cloves
  • 1 pinch ground nutmeg
  • 1/2 cup frozen whipped topping, thawed

Directions

  1. Preheat oven to 325 degrees F (165 degrees C).
  2. In a large bowl, combine cream cheese, sugar and vanilla. Beat until smooth. Blend in eggs one at a time. Remove 1 cup of batter and spread into bottom of crust; set aside.
  3. Add pumpkin, cinnamon, cloves and nutmeg to the remaining batter and stir gently until well blended. Carefully spread over the batter in the crust.
  4. Bake in preheated oven for 35 to 40 minutes, or until center is almost set. Allow to cool, then refrigerate for 3 hours or overnight. Cover with whipped topping before serving.

Another great centerpiece I found on Off Beat Bride will have all you crafty people (me included) running to Micheal’s to buy yarn. These yarn centerpieces are one of the easiest DIY projects and will be the perfect alternative to flowers.

Inspired by green kitchens!

For the first time ever I will not be stepping into a mall this Holiday season. I feel like a big weight has been lifted off my shoulders since deciding to do all of my shopping online this year.

Of course, it got me thinking of all those engaged couples out there who will be roaming stores like Crate & Barrel with their gun in-hand making wedding registries. I’ve blogged a few times about wedding registries and gifts for the bridal party. Well, now it’s time to start putting those gifts into an inspiration board!

I make inspiration boards for just about anything to make sure I don’t stray away from the end vision. This is why I haven’t  made the jump onto pinterest.com, I know its silly, but honestly, I would spend ALL day on there and not get anything done!

Since my favorite color is green I’m inspired by green kitchens. Obviously you can do small splashes of different shades of green for your kitchen but, in the end, its all about bringing the outdoors in!

Hot Spiced Drunken Apple Cider

Do you really have to explain anymore? This will get the Holiday season started right! ;)

Hot Spiced Drunken Apple Cider

Serves 8-10, Recipe courtesy of Glamour Magazine and Food52.

Ingredients

  • 1/2 gallon apple cider
  • 3/4 bottle of gewurztraminer (or other white wine which is not too dry)
  • 4-5 sticks of cinnamon
  • 4-5 cloves
  • 1/4 teaspoon nutmeg
  • 1 vanilla bean split lengthwise (or use 1 tbsp. vanilla extract)
  • 3-4 tablespoons honey (depends on how sweet the wine you’re using)
  • cup or so of fresh cranberrries (or 1 cup apples)

Directions

  1. Put the cider and all spices in a pot and bring to a boil.
  2. Reduce the heat and simmer for about 10 minutes.
  3. When on low heat add the wine. Do not boil again so the alcohol won’t evaporate too much, just let it warm.
  4. Add the cranberries and simmer for a few more minutes until they color the liquid a bit.
