Beet, Apple & Cheddar Salad

Yes… you read that right! Beet, apple, and Cheddar salad. When eaten raw beets have a pleasant sweetness and crunch like apples. With this recipe it is very important to slice the beet as thin as possible.

Its very easy and ready in minutes. Your guests will love this salad and it has the added benefit of antioxidants! 🙂

Beet, Apple & Cheddar Salad

Serves 4

  • 8 purple and/or gold medium sized beets
  • 1 tbsp. olive oil
  • 1 tbsp. kosher salt
  • 1 oz. extra-sharp white Cheddar
  • 1/3 Sierra Beauty or Braeburn apple, thinly sliced

Vinaigrette

  • 2 tbsp. grapeseed oil or grapeseed olive-oil blend
  • 4 tsp. hazelnuts, toasted and chopped
  • 1/2 tsp. salt
  • 1 tbsp. sugar
  • 2 tbsp. apple-cider vinegar
  • 2 tsp. diced shallots

1. Combine vinaigrette ingredients. Set aside.

2. Wash beets and apples well, dry. Halve, core, and thinly slice the apple. Peel, trim, and thinly slice the beet.

3. Combine apples, beets, Cheddar, and salad greens to bowl. Dress with the vinaigrette and toss well.
