Thin Mint Truffles

Girl Scout cookie season is coming to a close, but what can you do with all those boxes you have in the freezer? Southern in the City came up with a fantastic recipe and photo.

It’s easy to make and you can change the chocolate colors to match your wedding! If you don’t want to do white and green just grab another package of white chocolate chips and add some food coloring. The key to doing this is making sure you don’t add to much food coloring at one time to make sure you get the color you want.

Thin Mint Truffles

Ingredients:

  • 1 box thin mints
  • 4 oz cream cheese, softened

  • 1 package green candy melts
  • 1 package white chocolate 

Directions:

  1. Crush Thin Mints into fine crumbs in a food processor. Mix crushed cookies and softened cream cheese in a large bowl until completely combined. Roll into small balls and place them in the refrigerator to cool.
  2. Melt your green chocolate discs in the microwave, stirring until smooth. Using a toothpick or fork, dip the Thin Mint balls into the chocolate, letting the excess chocolate drip off. Set the truffles on waxed paper to cool. If desired, drizzle with white chocolate.
