Sticky Chicken Drumsticks & NOLA-Style Jambalaya

I’m gearing up this week for our annual Superbowl party and wanted to share a few party food ideas I came across on People.com that will be making my menu for this weekend.

Sticky Chicken Drumsticks

Serves 4-6, Recipe courtesy of Curtis Stone.

Ingredients

  • 1/4 cup Chinese barbecue sauce (char sui)
  • 1/4 cup honey
  • 3 garlic cloves, finely chopped
  • 1 tbsp. finely chopped peeled fresh ginger
  • 12 chicken drumsticks
  • 2 tsp. toasted sesame seeds

Directions

  1. Mix the barbecue sauce, honey, garlic and ginger in a re-sealable storage bag to blend.
  2. Add the chicken, seal the bag and toss to coat with the sauce.
  3. Refrigerate for at least one hour, but preferably overnight.
  4. Position the rack 8 to 10 ins. from the broiler and preheat the broiler.
  5. Line a large, heavy-rimmed baking sheet with heavy-duty foil.
  6. Transfer the chicken and marinade to the baking sheet and broil for 25 minutes, turning occasionally and watching closely, or until the chicken is cooked through and the marinade glazes the chicken.
  7. Sprinkle the chicken with sesame seeds and serve.

Pork and Sausage Jambalaya

Serves 10-12, Recipe courtesy of John Besh.

Ingredients

  • 1/2 lb. bacon, diced
  • 1 onion, diced
  • 1/2 green pepper, diced
  • 1 stalk celery, diced
  • 1 lb. smoked pork sausage, sliced
  • 3 cups uncooked, converted Louisiana white rice
  • 1 tsp. smoked paprika
  • 1 tsp. dried thyme
  • 1/2-1 tsp. crushed red pepper flakes
  • 5 cups chicken broth
  • 1 cup tomato sauce or canned diced tomatoes
  • 2 cups diced cooked pork
  • 3 green onions, chopped
  • Salt
  • Hot sauce

Directions

  1. In a large, heavy-bottomed pot, cook bacon over medium-high heat until fat is rendered, about 3 minutes. Add onions, stirring often until browned. Add green pepper, celery and sausage; cook, stirring often, 3 minutes longer. Add rice, paprika, thyme and red pepper flakes.
  2. Add chicken broth, tomato sauce, pork and green onions; bring to a boil, stirring well. Reduce heat, cover and simmer 18 minutes until rice is done. Remove from heat. Season with salt and hot sauce.
