Prepare to have you socks knocked off because this South African dessert is that good! When we made it it only lasted about a day because its Heaven in your mouth. It reminds me of a dulce de leche with its bread-pudding texture and toffee-like taste. Traditionally served in South Africa during Christmas time
Malva Pudding
Serves 6 to 8.
Ingredients
- 3/4 cup sugar
- 2 large eggs
- 1 tbsp apricot jam
- 1 tbsp unsalted butter, melted
- 1 tsp. vinegar
- 1/3 cup milk
- 1/2 cup all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
For Sauce:
- 1/2 cup sugar
- 3/4 cup heavy cream
- 7 tbsp. unsalted butter
- 1/3 cup hot water
- 2 tsp. vanilla extract
Directions
- Preheat oven to 350. In a bowl, whisk 3/4 cup sugar and 2 large eggs until thick and yellow. Mix in 1 tbsp. apricot jam, 1 tbsp. unsalted butter, melted, 1 tsp vinegar, and 1/3 cup milk.
- In second bowl, mix 1/2 cup all-purpose flour, 1 tsp. baking soda, and 1/2 tsp. salt. Pour dry mixture into wet mixture, and stir until combined.
- Pour batter into an 8-inch square or round baking pan. Bake in center of over until pudding has risen and top is evenly browned, 16-18 minutes.
- While it bakes, make the sauce. Combine 1/2 cup sugar, 3/4 cup heavy cream, 7 tbsp. unsalted butter, 1/3 cup hot water, and 2 tsp. vanilla extract in a saucepan over low heat. Simmer and stir constantly, until butter is melted and sugar is dissolved, 3-5 minutes. Set aside.
- Let the baked pudding sit for a few minutes. Pour sauce evenly over top, let stand 15 minutes.
